Red Curry Paste
Untuk membuat Red Curry, dibutuhkan bahan-bahan seperti jahe, serai, daun jeruk, bawang putih, bawang merah, cabe rawit, kemiri, dan lain-lain. Namun, untuk memudahkan, bisa menggunakan Red Curry Paste yang sudah jadi. Anda bisa menemukan Red Curry Paste ini di supermarket atau toko bahan masakan.
Berikut adalah bahan-bahan dan cara membuat Red Curry Paste sendiri:
Bahan-bahan:
- 11 buah cabe merah
- 5 buah cabe rawit
- 10 butir bawang merah
- 7 siung bawang putih
- 3 cm lengkuas
- 2 batang serai, ambil bagian putihnya saja
- 1 sdm biji ketumbar sangrai
- 1/2 sdt jintan bubuk
- 1 sdt garam
- 1 sdt terasi bakar
- 2 sdm minyak goreng
Cara membuat:
- Haluskan semua bahan dalam blender atau cobek. Tambahkan sedikit minyak apabila sulit dihaluskan.
- Tumis bumbu yang sudah dihaluskan dalam minyak hingga harum. Red Curry Paste siap digunakan atau bisa disimpan dalam kulkas selama 1 minggu.
Cara membuat Red Curry Udang
Bahan-bahan:
- 500 gr udang, kupas dan bersihkan
- 3 sdm Red Curry Paste
- 400 ml santan kental
- 1/2 sdt garam
- 1 buah tomat, potong kecil-kecil
- 1 batang daun bawang, iris halus
- 1 sdm minyak goreng
Petunjuk:
- Panaskan minyak goreng dalam wajan. Tumis Red Curry Paste hingga harum.
- Tambahkan santan sedikit-sedikit sambil terus diaduk hingga mendidih.
- Masukkan udang dan garam. Aduk rata hingga udang matang.
- Tambahkan potongan tomat dan daun bawang. Aduk rata dan masak sebentar.
- Angkat dan Red Curry Udang siap disajikan.
