Cara membuat curry paste-nya juga mudah banget. Pertama-tama, haluskan cabe merah keriting, bawang putih, dan jahe di dalam blender atau ulek sampai halus. Kemudian, tumis bumbu halus bersama serai, daun jeruk purut, ketumbar bubuk, dan jintan bubuk sampai harum. Tambahkan pasta tomat, kecap ikan, minyak sayur, gula pasir, dan garam, aduk rata dan tumis selama 1-2 menit lagi. Angkat dan biarkan dingin.
Bahan-bahan Thai Red Curry:
- 500 gram daging ayam atau sapi, potong-potong
- 1 buah paprika merah, iris
- 1 buah paprika hijau, iris
- 1 buah wortel, iris korek api
- 100 gram buncis, potong-potong
- 200 ml santan kental
- 50 ml air
- 2 sdm minyak sayur
